Instructions
Steps to make Masala Tindora (Ivy Gourd) with Potatoes:
Cut stems of tindora from both sides, make two cuts from centre and immerse in water. Remove skin of potato and cut in big and thick slices and immerse in water with tindora.
Cut onions, tomato, ginger and garlic and put in mixer grinder jar. Also add roasted peanut powder and make a smooth paste out of it.
Heat up the oil in a pressure cooker. Once oil gets heated add mustard seeds and let it crackle. Add prepared paste, mix well and cook for a minute. Now add turmeric powder, red chilli powder, dhania jeera powder, salt and garam masala and mix well. Now add tindora and potato slices which we immersed in water. Add kasuri meethi and required amount of water. Mix all well. Close the lid of the cooker and pressure cook for 5 to 6 whistles.
Garnish with coriander leaves and serve hot with roti and rice.
