    The ingredients needed to make Veggie (or Quinoa) Rice:

    1. Make ready 1 1/4 cup uncooked white rice (or Quinoa)
    2. Prepare 1 3/4 cup water
    3. Get 1/2 cup chopped onion
    4. Get 1/2 cup chopped green bell pepper
    5. Get 1 cup zucchini squash, peeled and diced
    6. Take 1 cup chopped mushrooms
    7. Get 1 tbsp minced garlic
    8. Make ready 2 tbsp olive oil
    9. Prepare 1/2 cup grated parmesan cheese
    10. Take 1 tsp oregano (or italian seasoning mix)
    11. Prepare 1 salt & pepper to taste

    Add quinoa and veggies and cook until starting to soften and coated in. Add Quinoa, and cooked eggs to the mixture. Add in Oyster Sauce and mix. Soy sauce to taste if not salty, or optional sugar if sweetness is desired.

    Instructions to make Veggie (or Quinoa) Rice:

    3. Add in water and bring to a boil. Turn off heat and cover and let sit till most all water is absorbed. If substituting with quinoa reduce to a low simmer and stir occasionally until liquid is completely absorbed.
    4. Stir in Parmesan cheese and extra seasoning if desired serve.
