    2. Take 2 tbsp rice flour
    3. Get 1 cucumber
    4. Make ready 1/2 onion chopped

    6. Take 3 tbsp grated fresh coconut
    7. Get 2-3 spicy green chillies
    8. Prepare 1 inch ginger paste
    9. Take to taste Salt
    10. Prepare as required Oil for roasting
    11. Prepare as required Green coriander-coconut chutney to serve with dosa

    Instructions

    Steps to make Quinoa-Cucumber Dosa:

    1. Wash and soak quinoa in water for overnight.
    2. Next day discard water. Peel and chopped cucumber, onion. In mixer jar first, add cucumber, then green chillies, ginger, onion, coriander leaves. Add soaked quinoa. Grind to smooth batter.(Add little water if needed to make dosa batter/ don't make thin watery).
    3. Pour prepared batter in bowl add rice flour and salt. Mix well for 2 mins.
    4. Heat dosa tawa. Grease with oil. Wipeout with tissue paper. Pour 2 ladleful of prepared quinoa- cucumber dosa batter on it. Spread it as shown. Sprinkle little oil on edges. Roast on medium flame. As the lower side turns crispy brown, flip over and cook another side for few minutes.
    5. Serve/Relish Delicious Hot Quinoa- Cucumber Dosa with green coriander- coconut chutney and hot coffee.
