    1. Get 1 cup quinoa
    2. Make ready 2 cups water to cook quinoa

    7. Get 1/2 tsp mustard seeds

    Instructions

    Steps to make Quinoa Poha:

    1. Wash and soak quinoa for 20 mins. In a saucepan boil two cups of water add 1/2 tsp salt. Once the water starts boiling add quinoa and cover and cook for 15-20 mins.
    2. Once quinoa will cook, each granule will get a little white tail.
    3. Now take a pan, heat oil add mustard seeds and cumin seeds and crackle them. Add all whole spices and fresh curry leaves. Fry onions till translucent.
    4. Add boiled potatoes and turmeric powder and saute for few mins. Now add cooked quinoa and salt and mix it well. Serve with chopped coriander leaves.
    5. Add lemon juice and serve, we can also add some roasted crushed peanuts as per our taste. Healthy and tasty quinoa Poha is ready.
